Black Beans

A black bean dish that’s great as a side or as a burrito filling. Uses an instant pot for fast cooking without having to soak.


  • 1 cup dried black beans

  • 3 cups water

  • 2 strips bacon

  • 2 jalapenos, sliced

  • 1/4 white or yellow onion, diced

  • 2 tbsp butter


  • Combine beans and water in instant pot, cook on high pressure for 30 mins and let steam naturally vent for 15-30 mins. Drain most of the excess liquid, but leave enough to prevent beans from becoming dry
  • Cook bacon, remove from pan and chop up
  • Lightly saute jalapenos and onion in the bacon fat, then add beans. Add butter and stir to emulsify
