Lamb Meatballs
One of my favorites to bust myself out of a food slump, this goes great with a Mediterranean or Middle Eastern inspired ensemble of basmati rice (+ turmeric), herb roasted potatoes, all topped with a vibrant Romesco sauce.
Ingredients
1 lb Ground lamb
1/2 cup Panko breadcrumbs
1 Egg
Lemon zest from 1 lemon
4 cloves Garlic, minced
2 tbsp Parsley, chopped
2 tsp Dried oregano
1/2 tsp Cumin, ground
Salt, to taste
Fresh ground black pepper, to taste
1 tsp Red pepper flakes
Directions
- Add all ingredients to a mixing bowl and work together with hands
- Form into ~24 balls
- Cook using desired method, air-fry/convection bake recommended
- Serving with Romesco sauce is highly recommended
