A prohibition era cocktail served at the iconic Havana hotel.

Ingredients

  • 4-6 pineapple chunks

  • 0.75 oz lime juice

  • 0.5 oz demerara syrup

  • 0.5 oz apricot liqueur

  • 1.5 oz navy strength, pot still rum (Smith & Cross)

Directions

  • Muddle pineapple, lime juice, and syrup, then add remaining ingredients and shake with ice
  • Double-strain into a coupe
