Chipotle Chicken Marinade
This Joshua Weissman Chipotle imitation is smokey, spicy, and great for tacos, burritos, salads, etc. The spice level will depend entirely on which dried peppers you use.
5-6 dried, smoked mexican chilis: guajillo, ancho, morita, arbol, etc
5-6 dried mushrooms: chanterelle, oyster, etc
1-2 cups water
2 tsp coriander seeds
2 tsp cumin
4 cloves garlic
1 tsp ground cinnamon
4 tbsp oil
3-5 lb chicken thigh and/or breast
- Soak dried chilis and mushrooms in boiling water for 10-15 min
- Toast coriander seeds and cumin, then grind or blend
- Add toasted spices, garlic, cinnamon, and the soaked peppers and mushrooms along with the soaking liquid to a blender, blend until smooth. Then slowly add in oil while blending to emulsify.
- Add to chicken and marinate. Best grilled.
