Chipotle Chicken Marinade

This Joshua Weissman Chipotle imitation is smokey, spicy, and great for tacos, burritos, salads, etc. The spice level will depend entirely on which dried peppers you use.

Ingredients

  • 5-6 dried, smoked mexican chilis: guajillo, ancho, morita, arbol, etc

  • 5-6 dried mushrooms: chanterelle, oyster, etc

  • 1-2 cups water

  • 2 tsp coriander seeds

  • 2 tsp cumin

  • 4 cloves garlic

  • 1 tsp ground cinnamon

  • 4 tbsp oil

  • 3-5 lb chicken thigh and/or breast

Directions

  • Soak dried chilis and mushrooms in boiling water for 10-15 min
  • Toast coriander seeds and cumin, then grind or blend
  • Add toasted spices, garlic, cinnamon, and the soaked peppers and mushrooms along with the soaking liquid to a blender, blend until smooth. Then slowly add in oil while blending to emulsify.
  • Add to chicken and marinate. Best grilled.
